INGREDIENTS:
1 loaf of thin/sandwich sliced Multi-Grain Bread – crust removed
2 Tbs of butter for brushing tin & bread
1/4 cup of butter 1 finely diced onion
2 tsp crushed garlic
1 tsp mustard – wholegrain or Dijon
1 tsp salt 1 tsp white pepper
1/4 cup of plain flour
2 cups of milk
1 cup of grated cheese
150 grams of ham, bacon or tuna
1 x 440g can of drained corn kernels or can of creamed corn
INSTRUCTIONS:
Preheat oven at 160 degrees.
Melt 2 Tbs of butter in the microwave (approx 30 seconds).
Brush patty cake tins with this melted butter.
Mould bread into each hole.
Brush each piece of bread using the same melted butter, ensure to do the top edges as they are most vulnerable to burn. Set aside.
Make filling as below.
Melt butter in a saucepan. Add onion, stir, and cook for a couple of minutes until soft.
Add garlic, onion, mustard, salt & pepper.
Stir in flour.
Cook for a couple of minutes.
Slowly add milk, little by little, stirring constantly.
When it is a nice thick, smooth consistency, add cheese, meat and corn.
Scoop filling into each bread case.
Cook in the oven for approximately 20 minutes.
